PDO & PGI
PDO and PGI are quality systems born in Europe to recognize the excellence and value of some particular agricultural food productions.
The products with PDO and PGI recognition represent a production excellence, the final result of a unique combination of factors (both environmental and human) characteristic of a specific territory. Through the PDOs and PGIs it was intended to protect the names of the products and their typicality against imitations and abuses, to equip producers with concrete tools to better identify and promote these products, supporting the production system and local economies and protecting consumers, guaranteeing a certified and controlled quality.

The Protected Designation of Origin (PDO) is recognized to those products whose specific characteristics and are due essentially to a particular geographical environment.
To achieve this recognition, all stages of production, processing and preparation of the product must take place in the geographical area, following a production process conforms to a precise production regulations, in compliance with the traditional recipe.
PROTECTED GEOGRAPHICAL INDICATION PGI
The Protected Geographical Indication (PGI) recognizes the value of a particular specialty food products in a given geographical area to which can be attributed to a specific quality, reputation or other characteristic.
To obtain recognition at least one stage of production, processing or preparation must take place in the defined area, following a production process conforms to a precise production regulations, in respect of the traditional recipe
WHO WE ARE
ISIT (Istituto Salumi Italiani Tutelati) is the most important association for PDO and PGI deli meat Protection Consortia (Consorzi di Tutela).
Founded in 1999 and associating nowadays 16 Protection Consortia, ISIT boasts a large representation in the protected production sector, an authentic Ambassador of the true Made in Italy products in terms of quality, tradition and links with the territory.
