{"id":5517,"date":"2024-12-14T12:50:05","date_gmt":"2024-12-14T11:50:05","guid":{"rendered":"https:\/\/www.isitsalumi.it\/?p=5517"},"modified":"2024-12-23T15:54:45","modified_gmt":"2024-12-23T14:54:45","slug":"lo-chef-massimo-bottura-decreta-il-vincitore-del-concorso-gli-chef-di-domani","status":"publish","type":"post","link":"https:\/\/salumitalia.it\/de\/news\/lo-chef-massimo-bottura-decreta-il-vincitore-del-concorso-gli-chef-di-domani\/","title":{"rendered":"LO CHEF MASSIMO BOTTURA DECRETA IL VINCITORE DEL CONCORSO \u201cGLI CHEF DI DOMANI\u201d\u00a0\u00a0"},"content":{"rendered":"<p>Lo Chef <strong>Massimo Bottura:<\/strong> \u201c<strong>In queste nove edizioni del concorso, ho assistito anno dopo anno ad una crescita incredibile della qualit\u00e0 delle ricette\u201d<\/strong><\/p>\n<p>\u201cPassione, dedizione e tanto lavoro, passando dal rispetto delle materie prime\u201d, questo il messaggio dello chef Massimo Bottura agli studenti in gara questa mattina in Piazza Roma a Modena, dove si \u00e8 svolta la finale del Concorso \u201cGli Chef di domani\u201d, nel corso della tredicesima edizione della festa dello Zampone e del Cotechino Modena IGP, organizzata dal Consorzio di Tutela.<\/p>\n<p>Gli studenti delle dieci scuole alberghiere precedentemente selezionate dallo chef Massimo Bottura, arrivati a Modena da tutta Italia, visibilmente emozionati, hanno preparato live le loro ricette a base di Zampone e Cotechino Modena IGP, per sottoporle al giudizio insindacabile dello chef pluripremiato di fama mondiale Massimo Bottura.<\/p>\n<p>La <strong>giuria &#8211; presieduta dallo chef modenese, insieme al Presidente del Consorzio Zampone e Cotechino Modena IGP Paolo Ferrari<\/strong> &#8211; ha decretato le 3 scuole vincitrici.<\/p>\n<p>Al primo posto, l\u2019IPC Musatti di Dolo (Venezia) con la rivisitazione di un piatto proprio dello Chef Bottura<strong> \u201cUna compressione di pasta e fagioli\u201d<\/strong>. L\u2019interpretazione di un piatto storico di Bottura che ha pi\u00f9 di 25 anni, creata durante il suo periodo di collaborazione con grandi chef del calibro di Alain Ducasse e Ferran Adri\u00e0, la pasta e fagioli. La rivisitazione degli studenti del Musatti ha subito conquistato chef Bottura tanto da definire il piatto \u201ceccezionale\u201d e conferirle il podio del primo posto.<\/p>\n<p>Al secondo posto, l\u2019IPSEOA don Pino Puglisi di Enna, con la ricetta<strong> \u201cCavati con cozze, fagioli e Cotechino Modena IGP\u201d<\/strong>, dove a convincere Bottura \u00e8 stata l\u2019eccezionalit\u00e0 del sapore, \u201cun abbinamento incredibile quello delle cozze con i fagioli\u201d, commenta lo chef, per un piatto che definisce \u201ctotalmente sapore\u201d.<\/p>\n<p>All\u2019 l\u2019I.I.S. \u201cP.
